What is Christmas dinner without a decadent dessert?

You’ve had your roast potatoes and you’ve earned your brownie points by filling up on vegetables (of course…), so now it’s time to indulge your sweet tooth whilst trying to ignore the washing up and bickering over which board game is up next.

Seeing as it’s the season of giving, we thought it was only fair to give something back to our lovely readers. So allow us to share with you our super festive, always crowd-pleasing, totally delicious Raw Christmas ‘Cheesecake’ recipe, plus it’s free from gluten, sugar & dairy and 100% raw.

You can never go wrong with a ‘cheesecake’ at the best of times, however, this little gem has a Raw Horizons twist. Made with lovely natural ingredients, this pudding will leave you feeling more saintly than stuffed. What’s more, it’s incredibly easy to make, allow us to demonstrate…

For the base:
150g almonds
150g dates
1tsp vanilla extract
Pinch salt

For the filling:
250g soaked cashews
Juice of 2 lemons
2 tbsp ginger
2 tsp all spice
75g dried mixed fruit
150ml water
100g mixed fruit soaked in orange juice

Follow Claire’s lead in her video above and you’re sure to be the most popular person at the dinner table! Like we said, it couldn’t be simpler. Once the cheesecake has set in the freezer, take it out and allow to thaw and soften for about 20 minutes before serving. You can cut it into handy servings before storing it back in the freezer, making it easy to grab a slice when ever you fancy. If somebody else doesn’t beat you to it that is!
